How to Make the Apple Pie Cookie

Dough:

½ cup Vanilla Protein powder

½ cup almond Flour

1 cup oat flour

½ cup powdered PB

4 tablespoon butter
46 tablespoon  Plain Nonfat Greek Yogurt add more as needed 

2 tablespoon sugar substitutes 

 

Apple pie filling

4 apple

1 tablespoon butter

¼ cup brown substitute sugar

1 teaspoon clove

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon all spices 


For the dough, add all of your dry ingredients and mix it well together. Add in your wet ingredients and mix until all of your ingredients are combined. You want a nice dough crumble-like consistency. Scrape the side of the bowl if the dry ingredient sticks to the side to make sure it is all well mixed. Separate the dough in 9 portions and form balls. Place the ball in the fridge for 60 minutes.

For the apple filling, core, peel and chop  melt the butter in a pan and on low heat saute your apple until they are soft and cooked. Mix in all the other ingredients and cook on low heat for another 2 minutes. Put the filling in the fridge to cool down for about 30 min. 

Preheat your oven at 350°F. Spray some cooking oil on your muffin tray. Take your dough out of the refrigerator and with a rolling pin form a round shell and place it at the bottom of your muffin mold. Repeat this process for 8 out of the 9 balls of dough.Place 1-2 tablespoons of apple pie filling in the dough. Use the 9th dough ball and with the rolling pin expand the dough and cut some small laniere to make some criss cross design on top of the pie. 

Place in the oven for 10-15 minutes or until golden brown and enjoy.
